Soft Idly


How to make Batter for Idly using mixie  with some tips :

Ingredients

For 4 cups of Idly rice
use 3/4 cup of Whole urad dal and 1 tsp of Methi seeds
salt - 3 to 4 tsp

Wash and Soak rice with good water.

At the same time,
Wash and soak dal with methi seeds with good water (with which we grind it).
Keep in fridge till rice soaks for 3 to 4 hrs.

Keep a bottle of water too in fridge to get cool.

Tips:

1. As dal gets cooled and grinding with same cool water, 
we get more batter and fluffy too
Add water little by little, don't use whole at a time while grinding

2. Always grind urad dal first and then grind rice

Store the grounded dal batter in fridge till rice gets grinded

3.Grind dal and rice seperately 

4. Usually I prefer 1:7 ratio of dal and rice while grinding in wetgrinder and more 
important the dal should be good quality

5.While grinding rice, add chill water 
so that batter, Jar and machine won't gets Heat till end of grinding

6. Add salt with both batter , mix altogether with hand which helps in fermentation process.

7. People Staying in Chill Places worry about batter fermentation
Here are some tips for that

Add 1 laddle of Old idli batter with new batter, which gets ferment in 6 to 8 hrs.
Or 
If not adding old batter , old batter not in stock?
Just keep the batter inside Oven with just the oven lights ON ( Only Lights ON)

8. don't grind the batter too thin or too thick


Here are some step-by -pics for making batter ferment with Old batter :

Old batter and salt in a big vessel.

Then grind dal, add
grind rice , add
mix well together






After 7 hrs:


Once Fermented , mix well and store in container , Prepare soft idly

Here are some tips while steaming idly:

Once the water in idly vessel gets boiled ,
 then keep the idly plates with batter and steam it
So that it cooks fast and Soft ....

Before making Idly, bring the batter to room temperature.
Using batter immediately after  taking from fridge, 
will take long time to cook and gets harder.


Dip the cloth in water and then pour batter.


Just make a hole in idly ,after 5 to 7 mts once cooked
If it's not sticky, then take out and store in hot case.
And even the idly cloth will come very clean , once idly cooked perfectly
