Veg Dum Briyani (Restaurant style)



How to Make easy Dum Briyani at home?

Clean and chop the required vegetables.

Wash and soak 1 cup of Basmati Rice for 10 mts.

First Prepare Veg Masala:

Heat a Kadaai, Add 1 laddle of oil and Season cinnamon,cloves........whole garam masaalas
Then Add in sliced Onion and fry well, 
Add sliced 2 green chillies and 1 tbsp of gingergarlic paste , saute well
Add chopped vegetables,
And 1 spoon of chillypowder, 1/2 spoon of dhaniya powder , 1/2 garam masala powder, 
Mix well
Add a laddle of thick curd, salt for vegetables
Mix and Cook till 90% done

If required Add some water
Can Add mint and coriander leaves




Mean while , cook the rice 90% with salt, oil , jeera in Water
Strain and keep aside



Once both are 90% done,
Take a wide vessel, spread half of veg masala , then half of rice above it.
Sprinkle some food colour and garam masala ,
 repeat the process...




Finally spread some ghee and sprinkle coriander leaves
( mint leaves if required)

close with lid,
For making Dum, pour some water in a wide pan, keep the vessel on that
Leave for 20 to 30 mts in simmer
Till moisture absorbs in rice and done.


Once done Mix evenly, 
Serve hot with raita....
