Mutton Dum Briyani



Preparation Method



1. Heat 2 laddle of oil in cooker. Season 2 each of whole garam masalas, pepper
Add 1 sliced Onion, 3 to 4 green chillies
Saute well till onion fried well

2.   Add 1/2 kg mutton, 1 tbsp of gingergarlic paste
1 sliced tomato, 1 tsp of chillypowder
1/2 tsp of garammasala powder and coriander powder

3. saute well together
Add 1/2 laddle of curd, salt for mutton, chopped coriander and mint leaves 

4. Mix altogether, add 1/4 cup of water
Close the cooker and leave 3 whistles till done.

Let the pressure gets down, Meanwhile
Prepare Rice


Soak 400 gms of Basmathi rice and remove water.

Boil water in a wide pan, add salt for rice, 
some oil
and whole garam masalas.

Add rice, cook till 90% done
strain water and keep rice aside.

To Dum:

In a wide pan, add half the mutton masala
Squeeze some lemon
Now Add half of the rice, sprinkle corianderleaves, 
food color or saffron water
Again Spread remaining masala, then rice
Sprinkle leaves, some ghee on top

Close the lid tightly and keep the vessel in stove with low simmer for
15 to 20 mts .
If we insert a spoon till end of vessel, masala must be dried , Now
off the stove 

Mix altogether well
Serve with raita, .....
